Pad Thai or Phad Thai is a stir-fried rice noodle dish commonly served as street food and at most restaurants in Thailand as part of the country’s cuisine. It is typically made with rice noodles, chicken, beef or tofu, peanuts, a scrambled egg, and bean sprouts, among other vegetables.


  1. Rice noodles
  2. Chicken breasts or shrimp
  3. Vegetable oil
  4. Brown sugar
  5. Soy sauce
    Rice vinegar and lime juice
  6. Fish sauce
  7. Vegetables (bell pepper, carrots, bean sprouts, green onions, garlic, and cilantro)
  8. Eggs
  9. Peanuts


  1. Cook noodles:
    Prepare rice noodles according to the directions listed on the package. This usually includes soaking in very hot water or boiling noodles, until al dente. Then rinsing briefly to prevent sticking.
  2. Prepare sauce:
    In a mixing bowl, whisk together brown sugar, soy sauce, rice vinegar, lime juice, and fish sauce, set aside.
  3. Cook chicken or shrimp:
    Heat oil in a wok or a 12-inch deep saute pan set over medium-high heat. Add chicken and saute until cooked for about 6 minutes. If using shrimp cook about 1 1/2 minutes per side or until opaque. Transfer to a plate, leaving oil in the pan.
  4. Saute vegetables until crisp-tender:
    Add bell pepper and carrots saute for 1 – 2 minutes then add garlic, green onions, and bean sprouts saute 1 minute longer.
  5. Cook eggs:
    Push veggies to the edges of the pan and crack eggs into the center. Cook and scramble until eggs have just set.
  6. Stir fry everything together:
    Add in chicken, noodles, and sauce and toss everything together and cook for 1 – 2 minutes.
  7. Garnish:
    Serve warm topped with cilantro, peanuts, and optional red pepper flakes and sesame seeds.
